Description
Creamy, fruity overnight oats with 12 grams of fiber per serving, naturally sweetened with raspberries and maple syrup. A quick, make-ahead breakfast that keeps you full until lunch.
Ingredients
- 1 cup (90g) old-fashioned rolled oats
- 1 cup (240ml) unsweetened almond milk
- ½ cup (120g) plain Greek yogurt (2% or full-fat recommended)
- 2 tablespoons (20g) chia seeds
- 1 tablespoon (7g) ground flaxseed
- 1½ tablespoons (30ml) maple syrup
- 1 teaspoon vanilla extract
- 1 cup (140g) frozen raspberries
- 1 teaspoon chia seeds (for raspberry swirl)
- Pinch of salt
Instructions
- Make the raspberry swirl: Add frozen raspberries and 1 teaspoon chia seeds to a small saucepan. Heat over medium-low for 5-7 minutes, stirring occasionally, until berries break down into a thick, jammy sauce. Mash with a spoon if desired. Remove from heat and let cool.
- Mix the oat base: In a medium bowl or directly in a mason jar, combine rolled oats, almond milk, Greek yogurt, 2 tablespoons chia seeds, ground flaxseed, maple syrup, vanilla extract, and a pinch of salt. Stir well with a whisk or fork until evenly combined.
- Divide between jars: Pour the oat mixture evenly into two pint-sized mason jars or airtight containers, filling each about two-thirds full.
- Add the raspberry swirl: Spoon cooled raspberry mixture on top of the oats (about 2-3 tablespoons per jar). Gently swirl with a knife or spoon to create ribbons—do not overmix.
- Seal and refrigerate: Put lids on jars and refrigerate for at least 6 hours, preferably overnight.
- Serve: Stir well before eating. Serve cold or microwave for 60-90 seconds for warm oats. Top with fresh raspberries, extra maple syrup, or granola if desired.
Notes
Don’t skip cooling the raspberry mixture—adding hot berries can alter the oat texture. Taste the oat base before refrigerating; it should be slightly sweeter than desired as flavors mellow overnight. For meal prep, store oat base and raspberry swirl separately and combine the night before eating to keep the swirl distinct. Use rolled oats for best texture; quick oats become mushy and steel-cut oats stay too hard.
