Instructions

  1. Preheat oven or toaster oven to 375°F (190°C). Lightly grease an 8-ounce ramekin with cooking spray or butter.
  2. In a small bowl, combine oats, cottage cheese, egg, maple syrup, vanilla extract, baking powder, and salt. Whisk until well combined (small curds are fine).
  3. Fold in any optional mix-ins, such as berries or chocolate chips.
  4. Pour batter into prepared ramekin, filling about three-quarters full. Smooth the top.
