- ½ cup (120g) cottage cheese (full-fat or 2%)
- 1 large egg, room temperature
- 1 tablespoon (15ml) maple syrup or honey
- ½ teaspoon vanilla extract
- ¼ teaspoon baking powder
- Pinch of fine sea salt
- Optional mix-ins: fresh or frozen berries, dark chocolate chips, cinnamon
Instructions
- Preheat oven or toaster oven to 375°F (190°C). Lightly grease an 8-ounce ramekin with cooking spray or butter.
- In a small bowl, combine oats, cottage cheese, egg, maple syrup, vanilla extract, baking powder, and salt. Whisk until well combined (small curds are fine).
- Fold in any optional mix-ins, such as berries or chocolate chips.
- Pour batter into prepared ramekin, filling about three-quarters full. Smooth the top.
- Bake for 18-22 minutes, until top is golden brown and springs back lightly when touched. A toothpick inserted in center should come out clean or with a few moist crumbs.
- Let cool for 2-3 minutes before serving. Serve warm, optionally topped with extra maple syrup, Greek yogurt, and fresh berries.
Notes
For fluffier texture, let batter rest 5 minutes before baking. Use room temperature ingredients for even baking. Avoid microwaving as it makes the texture rubbery. Store leftovers in the refrigerator for up to 4 days; reheat in oven at 350°F for 5-7 minutes.
