Description
Crispy, spicy, and tangy buffalo cauliflower bites baked to perfection, served with a creamy Greek yogurt ranch dip. A healthier alternative to buffalo wings that doesn’t compromise on flavor.

- 1 large head of cauliflower, cut into bite-sized florets (about 5–6 cups)
- ½ cup all-purpose flour (or gluten-free flour blend)
- ½ cup milk (any kind works—dairy, almond, oat)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup panko breadcrumbs (regular or gluten-free)
- ½ cup grated Parmesan cheese (optional but recommended)
- Cooking spray or olive oil spray
- ½ cup hot sauce (Frank’s RedHot recommended)
- 2 tablespoons melted butter (or vegan butter, or olive oil)
- 1 teaspoon honey or maple syrup
- Pinch of garlic powder
- ½ cup plain Greek yogurt (full-fat or 2%)
- 2 tablespoons buttermilk (or regular milk plus ½ teaspoon lemon juice)
- ½ teaspoon dried dill
- ½ teaspoon dried parsley
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt
- Pinch of black pepper
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire cooling rack on top. Spray the rack lightly with cooking spray.
- Wash the cauliflower head and cut it into bite-sized florets. Pat them dry with a clean kitchen towel.
- In a medium bowl, whisk together the flour, milk, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth.
- In a separate bowl, mix the panko breadcrumbs and grated Parmesan (if using).
- Working in batches, dip each floret into the batter, letting the excess drip off. Then roll it in the panko mixture, pressing gently so the crumbs stick. Place the coated florets on the prepared rack, leaving space between each piece.
- Spray the tops of the florets lightly with cooking spray. Bake for 20-22 minutes, until the coating is golden and crispy.
- While the cauliflower bakes, combine the hot sauce, melted butter, honey, and garlic powder in a small saucepan. Warm over low heat, whisking until smooth. Alternatively, microwave in 20-second bursts, stirring between each.
- In a small bowl, whisk together the Greek yogurt, buttermilk, dill, parsley, garlic powder, onion powder, salt, and pepper until smooth and creamy. Cover and refrigerate until ready to serve.
- Once the cauliflower is out of the oven, transfer it to a large bowl. Pour the buffalo sauce over the top and toss gently with tongs until every floret is coated. Serve immediately with the ranch dip on the side.
Notes
For extra crispiness, use an air fryer at 375°F for 12-14 minutes. The ranch dip needs at least 15 minutes to sit so the dried herbs can rehydrate. Leftovers reheat best in the air fryer or oven, not the microwave.
