- 2 cups (180g) rolled oats
- 1 cup (245g) pumpkin puree
- 2 large eggs
- 1/2 cup (120ml) milk (any kind)
- 1/3 cup (80ml) pure maple syrup
- 2 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- 2 teaspoons pumpkin pie spice
- 1 teaspoon cinnamon
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- Optional mix-ins: chocolate chips, chopped pecans, walnuts, or dried cranberries (about 1/3 cup total)
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners or spray with non-stick cooking spray.
- In a medium bowl, whisk together rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt.
- In a separate large bowl, whisk pumpkin puree, eggs, milk, maple syrup, melted coconut oil, and vanilla extract until smooth.
- Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined. If using mix-ins, fold them in now.
- Let the batter rest for 5 minutes to allow oats to absorb liquid.
- Divide batter evenly among 12 muffin cups, filling each about 3/4 full. Sprinkle extra oats or cinnamon on top if desired.
- Bake for 20-25 minutes, until tops are set and lightly golden, and a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For best texture, use rolled oats, not quick or steel-cut oats. Letting the batter rest for 5 minutes before baking improves texture. These taste even better on day two. Freeze for up to 3 months.
