Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Melt the butter in a small saucepan over low heat or in a microwave-safe bowl in 20-second bursts. Let it cool for a couple of minutes.
  3. In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth and well combined, about 30 seconds.
  4. Add the pumpkin puree, egg, and vanilla extract to the bowl. Whisk vigorously until fully incorporated and smooth.
  5. In a separate small bowl, whisk together the flour, cocoa powder, baking soda, salt, and cinnamon until no lumps remain.
  6. Add the dry ingredients to the wet ingredients in two additions, stirring gently with a rubber spatula after each addition. Stir just until no streaks of flour remain; do not overmix.
  7. Fold in the chocolate chips with the spatula. Reserve a handful of chips to press into the tops of the cookies before baking.
  8. Chill the dough for 20 minutes. This step is not optional.
