- 4 cups seedless watermelon, cubed
- 1 cup feta cheese, crumbled
- 1/4 cup fresh mint leaves, finely chopped
- 1/4 cup red onion, thinly sliced (optional)
- 2 tablespoons olive oil
- 2 tablespoons freshly squeezed lime juice
- Pinch of salt
- Freshly cracked black pepper, to taste
Instructions
- Slice your watermelon into 1-inch cubes and place them in a large mixing bowl.
- Crumble the feta cheese directly over the watermelon cubes.
- Finely chop the mint leaves and sprinkle them over the salad.
- If using, thinly slice the red onion and add it to the bowl.
- In a small bowl, whisk together olive oil, lime juice, a pinch of salt, and cracked black pepper.
- Pour the dressing over the watermelon mixture and gently toss with tongs or a salad spoon. Be careful not to mash the watermelon cubes.
- Transfer to a serving plate or bowl, garnish with a few whole mint leaves, and enjoy immediately.
Notes
Chill your watermelon cubes before assembling the salad for an extra-refreshing bite. Toss gently to keep the watermelon cubes intact and prevent the feta from clumping.
