Description

A quick and healthy Mediterranean-inspired salmon recipe cooked in parchment paper to lock in moisture and flavor, delivering tender, flaky fish infused with lemon, garlic, and fresh herbs.

  • 4 salmon fillets, skin-on, about 6 ounces each
  • 1 large lemon, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons extra virgin olive oil
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons capers, drained
  • Salt and freshly cracked black pepper, to taste
  • Optional: red pepper flakes, kalamata olives sliced thinly

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Cut four large squares of parchment paper, approximately 15×15 inches each. Fold each sheet in half and open to create a crease.
  3. Place each salmon fillet skin-side down on one half of a parchment sheet. Drizzle about 3/4 tablespoon olive oil over each piece, then sprinkle with salt, pepper, and minced garlic evenly.
  4. Top each fillet with lemon slices, a tablespoon of cherry tomatoes, and a half tablespoon of capers. Scatter fresh dill and parsley over everything. Add optional red pepper flakes or kalamata olives if desired.
  5. Fold the other half of the parchment paper over the salmon and fold the edges tightly together in small overlapping folds to create a sealed pouch.
  6. Place the parcels on the baking sheet and bake for 15-18 minutes, depending on fillet thickness, until the fish flakes easily but remains moist.
  7. Transfer the parchment packets to plates and carefully cut them open, watching out for hot steam. Serve immediately.

Notes

Do not overbake; fish continues cooking after removal from oven. Seal parchment packets tightly to trap steam and keep fish moist. Optional searing of skin before wrapping adds crispy texture. Leftovers keep up to 2 days refrigerated; reheat gently in oven wrapped in foil.
