  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 large English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1 small red onion, finely diced
  • 8 oz block feta cheese, crumbled
  • 1/2 cup Kalamata olives, halved
  • 1/2 cup fresh flat-leaf parsley, chopped
  • 2 tablespoons fresh mint, chopped (optional)
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1 small garlic clove, minced
  • Salt and black pepper to taste

Instructions

  1. Dice the cucumber into bite-sized pieces (about 1/2 inch). Place in a colander, sprinkle with 1/2 teaspoon salt, and let sit for 10 minutes. Pat dry with paper towels.
  2. While cucumber drains, dice the red onion finely and soak in a small bowl of cold water for 10 minutes. Drain and pat dry.
  3. In a small bowl or mason jar, combine olive oil, lemon juice, red wine vinegar, dried oregano, minced garlic, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Whisk or shake until emulsified.
  4. In a large mixing bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, Kalamata olives, and parsley. Toss gently.
  5. Crumble feta over the top and add mint if using. Fold gently with a spatula.
  6. Pour dressing over salad and toss gently to coat. Let rest at room temperature for at least 15 minutes before serving.
  7. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed. Serve at room temperature or chilled.

Notes

Salt the cucumber first to keep it crunchy. Let the salad rest for at least 15 minutes for best flavor. Use block feta instead of pre-crumbled for creamier texture. For extra crunch, toast chickpeas at 400°F for 15 minutes before adding.
