Description
A quick and easy no-bake berry cheesecake parfait layered in mason jars, combining creamy cheesecake, fresh berries, and a crunchy graham cracker crust for a light and indulgent brunch treat.
Ingredients
- 1 cup small-curd cottage cheese
- 4 oz cream cheese, softened
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons heavy cream or full-fat Greek yogurt
- 1 cup graham cracker crumbs
- 3 tablespoons unsalted butter, melted
- 1 tablespoon granulated sugar (optional)
- 1 cup fresh strawberries, hulled and sliced
- 1 cup fresh blueberries
- 1 cup fresh raspberries (or substitute with blackberries)
- 1 tablespoon honey or maple syrup (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- Prepare the crust: In a small bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until mixture resembles damp sand. Divide evenly among mason jars, pressing down gently to form an even base layer. Set aside.
- Make the cheesecake layer: In a food processor or blender, combine cottage cheese, softened cream cheese, powdered sugar, vanilla extract, and heavy cream or Greek yogurt. Blend until completely smooth and creamy. If too thick, add milk teaspoon by teaspoon until spreadable.
- Layer the parfait: Spoon or pipe a generous layer of cheesecake mixture over the crust in each jar, filling about halfway. Add a layer of mixed fresh berries (about 1/3 cup per jar). Repeat cheesecake and berry layers until jars are full or ingredients are used up.
- Add finishing touches: Drizzle honey or maple syrup over the top berries if desired. Garnish with fresh mint leaves.
- Chill before serving: Cover jars with lids or plastic wrap and refrigerate for at least 1 hour to let flavors meld and crust set. Can be prepared up to 24 hours ahead.
Notes
Pat dry frozen berries before layering to avoid soggy crust. Chill crust layer before adding cheesecake mixture to prevent sogginess. Use pure vanilla extract for best flavor. Can substitute crust with gluten-free almond flour or vegan cookie crumbs for dietary needs. Prepare up to 24 hours ahead and store refrigerated up to 2 days. Avoid freezing.
