Fresh Grilled Peach Salad with Burrata and Prosciutto

Description

A quick and easy summer salad featuring smoky grilled peaches, creamy burrata, and salty prosciutto, perfect for a light lunch or elegant appetizer.


Ingredients

  • 4 ripe but firm fresh peaches
  • 8 ounces burrata cheese
  • 6 ounces thinly sliced prosciutto
  • 4 cups arugula or mixed greens
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 23 tablespoons balsamic glaze
  • Salt and freshly ground black pepper to taste
  • Optional: toasted pine nuts or chopped fresh basil

Instructions

  1. Rinse and dry peaches. Cut each peach in half and remove pits. Halve or quarter smaller peaches for bite-sized pieces.
  2. Preheat grill or grill pan to medium-high heat. Brush grates or pan lightly with olive oil to prevent sticking.
  3. Place peach halves cut side down on grill. Cook about 3 minutes until grill marks appear and fruit softens slightly. Flip and grill 2 more minutes on skin side until caramelized but firm.
  4. In a small bowl, whisk together 2 tablespoons olive oil, 1 tablespoon lemon juice, salt, and pepper to make dressing.
  5. Toss arugula or mixed greens with half the dressing in a large bowl to lightly coat.
  6. Tear or slice prosciutto into bite-sized pieces.
  7. Arrange dressed greens on a serving platter. Top with grilled peaches, dollops of burrata, and prosciutto slices.
  8. Drizzle remaining dressing and balsamic glaze over salad.
  9. Sprinkle optional toasted pine nuts or fresh basil if desired.
  10. Let burrata sit at room temperature for 10 minutes before serving for best creaminess.
