A simple yet impressive summer salad featuring smoky grilled peaches, creamy burrata, a honey thyme drizzle, and a splash of balsamic glaze. Perfect for quick, fresh meals or entertaining.
Ingredients
- 4 ripe but firm fresh peaches, halved and pitted
- 8 ounces burrata cheese
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- 1 teaspoon fresh thyme, chopped (optional)
- 1 tablespoon balsamic glaze or aged balsamic vinegar
- 4 cups arugula or mixed salad greens, washed and dried
- Sea salt, to taste
- Freshly ground black pepper, to taste
- 1/4 cup toasted pecans or walnuts (optional)
Instructions
- Preheat your grill or grill pan to medium-high heat (about 400°F).
- Rinse peaches gently and slice in half, removing pits. Brush each peach half lightly with extra virgin olive oil.
- Place peach halves cut side down on the grill. Cook for 3-4 minutes until grill marks appear and peaches soften but hold shape.
- Flip peaches and grill skin side for another 2 minutes to warm through. Remove from grill and let cool slightly.
- In a small bowl, gently warm honey (about 10 seconds in microwave) and stir in chopped fresh thyme.
- In a large bowl, toss arugula or salad greens with a drizzle of olive oil, sea salt, and freshly ground black pepper.
- Transfer greens to a serving platter or bowl. Tear burrata into chunks and scatter over the salad.
- Nestle grilled peach halves on top, cut side up.
- Drizzle honey thyme mixture evenly over peaches and burrata.
- Add a few splashes of balsamic glaze or vinegar.
- Sprinkle toasted pecans or walnuts if using.
- Taste and adjust salt and pepper as needed.
- Serve immediately while peaches are warm and burrata is creamy.
