A fresh and flavorful salad featuring smoky grilled peaches, creamy burrata, fragrant basil, and crunchy toasted almonds, perfect for summer occasions.

- 4 ripe but firm peaches, halved and pitted
- 8 ounces fresh burrata cheese, drained and torn into chunks
- 1 cup loosely packed fresh basil leaves, washed and torn
- ½ cup sliced almonds, toasted until golden
- 2 tablespoons extra virgin olive oil
- 1 tablespoon aged balsamic vinegar
- 1 teaspoon honey (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your grill or grill pan to medium-high, around 375°F (190°C).
- Rinse and pat dry 4 ripe peaches. Cut them in half and remove the pits. Lightly brush each peach half with 1 tablespoon of olive oil.
- Place peach halves cut-side down on the hot grill. Cook undisturbed for 3-4 minutes until grill marks form and peaches start softening. Flip and grill the skin side for another 2 minutes. Remove from grill and let cool slightly.
- While peaches grill, heat a small dry skillet over medium heat. Add ½ cup sliced almonds and toast for 3-4 minutes, stirring frequently, until golden and fragrant. Transfer to a plate to cool.
- In a large bowl, combine torn basil leaves with 1 tablespoon olive oil, 1 tablespoon balsamic vinegar, and a pinch of salt and pepper. Toss gently to coat.
- Cut each grilled peach half into 2-3 slices and add to the bowl. Toss gently to combine without breaking the peaches.
- Tear 8 ounces of burrata into chunks and gently nestle them on top of the salad mixture.
- Sprinkle toasted almonds over the salad. Drizzle with 1 teaspoon honey if desired.
- Finish with a light sprinkle of freshly ground black pepper and a pinch of flaky sea salt. Serve immediately.
Notes
If burrata softens too much while assembling, chill the salad in the fridge for 5 minutes before serving. For dairy-free, substitute burrata with plant-based creamy cheese. Peaches can be swapped with nectarines or grilled pears/figs in off-season. Toast almonds carefully to avoid burning.
