Ingredients

  • 2 medium cucumbers, thinly sliced
  • 1 small red onion, thinly sliced
  • 2 tablespoons fresh dill, chopped

  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons olive oil (optional)
  • 1 tablespoon fresh lemon juice

Instructions

  1. Rinse and dry 2 medium cucumbers. Slice them thinly, about 1/8 inch thick. Place the slices in a medium bowl.
  2. Peel 1 small red onion and slice it thinly to match the cucumber slices. Add the onion slices to the bowl with cucumbers.
  3. Roughly chop 2 tablespoons of fresh dill and sprinkle over the cucumber and onion.
  4. In a small bowl, whisk together 3 tablespoons white vinegar, 1 tablespoon granulated sugar, ½ teaspoon salt, ¼ teaspoon black pepper, 2 tablespoons olive oil (optional), and 1 tablespoon fresh lemon juice until sugar and salt dissolve.
  5. Pour the dressing over the cucumber, onion, and dill mixture. Toss gently but thoroughly to coat all slices.
  6. Let the salad sit for 5-10 minutes before serving to allow flavors to meld. Adjust salt, pepper, or lemon juice to taste.

Notes

For best flavor, let the salad rest for 5-10 minutes before serving. Thin, even slices ensure better flavor absorption. Optionally, salt cucumbers and let sit for 10 minutes to reduce wateriness, then rinse and dry. Fresh dill is recommended over dried. Variations include adding Greek yogurt for creaminess or swapping herbs like mint or parsley.
