Description
A quick and easy 5-minute dip loaded with black beans, black-eyed peas, corn, bell peppers, and a tangy lime dressing. Perfect for parties, potlucks, or a healthy snack.

- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) black-eyed peas, drained and rinsed
- 1 can (15 oz) corn, drained (or 1 ½ cups frozen, thawed)
- 1 medium red bell pepper, diced small
- 1 medium green bell pepper, diced small
- ½ medium red onion, finely diced
- 1–2 jalapeños, seeded and minced
- 2–3 Roma tomatoes, seeded and diced
- ½ cup fresh cilantro, chopped
- 1 large avocado, diced just before serving
- ⅓ cup extra virgin olive oil
- ¼ cup fresh lime juice (about 2–3 limes)
- 2 tablespoons red wine vinegar
- 1 teaspoon honey or agave
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- ½ teaspoon salt (or to taste)
- ¼ teaspoon freshly ground black pepper
Instructions
- Drain and rinse the black beans, black-eyed peas, and corn in a colander. Let them drip dry.
- Dice the red and green bell peppers, red onion, jalapeño, and Roma tomatoes into small, uniform pieces (about ¼-inch).
- Roughly chop the cilantro, including the stems.
- In a small bowl or mason jar, combine olive oil, fresh lime juice, red wine vinegar, honey, minced garlic, cumin, salt, and pepper. Whisk or shake until well combined. Taste and adjust seasoning.
- In a large mixing bowl, combine the drained beans, corn, diced peppers, onion, jalapeño, tomatoes, and cilantro. Pour the dressing over the top and stir gently until evenly coated. Adjust seasoning if needed.
- Chill the mixture in the refrigerator for at least 30 minutes to allow flavors to meld.
- Just before serving, dice the avocado and gently fold it into the dip.
- Garnish with extra cilantro and lime wedges if desired. Serve with tortilla chips or as desired.
Notes
For best flavor, chill for at least 30 minutes before serving. Add avocado just before serving to prevent browning. Can be made a day ahead (without avocado). For a spicier version, leave seeds in jalapeño or add chipotle in adobo.
