- 1 cup (150 g) corn kernels, fresh or frozen (thawed)
- 1 cup (about 150 g) cherry tomatoes, halved
- 1 medium red bell pepper, finely diced
- 3 stalks green onions, thinly sliced
- 1 large ripe avocado, diced
- 1/4 cup fresh cilantro, chopped (optional)
- Juice of 2 limes (about 3 tablespoons / 45 ml)
- 2 tablespoons extra virgin olive oil (30 ml)
- 1/2 teaspoon ground cumin
- 1/4 teaspoon garlic powder (or 1 small clove fresh garlic, minced)
- Salt and black pepper to taste (start with 1/2 teaspoon salt)
- Optional: pinch of cayenne or diced jalapeño for heat
Instructions
- Drain and rinse the black beans under cold water and let drain for about 2 minutes.
- Halve the cherry tomatoes, dice the red bell pepper, slice the green onions, and chop the cilantro.
- Carefully halve, pit, and dice the avocado into medium chunks, avoiding mashing.
- In a small bowl, whisk together fresh lime juice, olive oil, ground cumin, garlic powder, salt, and pepper. Add cayenne or jalapeño if using.
- In a mixing bowl, combine black beans, corn kernels, tomatoes, red bell pepper, green onions, and cilantro.
- Pour the dressing over the mixture and gently toss to coat evenly.
- Fold in the diced avocado carefully to maintain its creamy texture.
- Taste and adjust seasoning with salt, pepper, or lime juice as needed.
- Serve immediately or refrigerate for 15-30 minutes to let flavors meld, covering tightly to prevent avocado browning.
