Description
These fluffy healthy protein berry pancake bites are soft, slightly sweet, bursting with berries, and made in a mini muffin tin for a grab-and-go breakfast that’s packed with protein and ready in under 20 minutes.
Ingredients
- 1 cup (100g) rolled oats
- ½ cup (120g) cottage cheese
- 1 medium ripe banana (about 120g mashed)
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons (30ml) maple syrup
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ¾ cup (about 100g) mixed berries (fresh or frozen)
Instructions
- Preheat your oven to 350°F (175°C) and generously spray a 24-cup mini muffin pan with non-stick cooking spray.
- Add the rolled oats to your blender and blitz on high for 20-30 seconds until they resemble a coarse flour.
- Add the cottage cheese, banana, eggs, vanilla, maple syrup, baking powder, cinnamon, and salt to the blender with the oat flour. Blend on medium-high for 30-45 seconds until smooth.
- Pour the batter into a medium mixing bowl and gently fold in the berries using a silicone spatula. If using frozen berries, do not thaw them first.
- Spoon the batter into the prepared mini muffin cups, filling each cup about ¾ full. You should get exactly 24 bites.
- Bake for 10-12 minutes or until the tops are set and lightly golden, and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the pancake bites cool in the pan for 5 minutes, then transfer them to a wire cooling rack.
- Serve warm or at room temperature.
Notes
For extra golden tops, brush the bites with melted butter or coconut oil before baking. If using frozen berries, fold them in gently and work quickly to prevent the batter from turning purple. For a dairy-free version, use thick plant-based yogurt instead of cottage cheese and add an extra tablespoon of oats. To double the protein, add a tablespoon of collagen peptides to the blender.
