Ingredients

  • Finely ground Turkish coffee (1 heaping teaspoon or about 6 grams per cup)
  • Cold water (3 ounces or 90 ml per cup)
  • Granulated sugar (1 teaspoon per cup, optional)
  • Green cardamom pods or ground cardamom (1/4 teaspoon ground or 1 lightly crushed pod per cup)
  • Optional rose water or orange blossom water (a drop or two)
  • Optional cold milk or cream (a splash)

Instructions

  1. Measure 3 ounces (90 ml) of cold water per cup into the cezve.
  2. Add 1 heaping teaspoon (about 6 grams) of finely ground Turkish coffee and 1 teaspoon sugar if desired.
  3. Add 1/4 teaspoon ground cardamom or 1 lightly crushed cardamom pod per cup.
  4. Stir the coffee, sugar, and cardamom gently into the water before heating.
  5. Place the cezve on low heat and heat slowly to allow foam to develop.
  6. Watch closely as thick foam forms at the edges and center (3 to 5 minutes). Do not stir once heating begins.
  7. Just as the foam begins to rise but before boiling over, remove the cezve from heat.
  8. Spoon some foam into each coffee cup.
  9. Return the cezve to low heat and let the coffee rise again until it starts to bubble (about 30 seconds), then remove from heat immediately.
  10. Pour the coffee slowly into the cups, distributing the liquid evenly over the foam.
  11. Let the coffee sit for a minute to allow grounds to settle before sipping.

Notes

Use low heat to develop foam slowly; do not stir after heating begins. Freshly crushed cardamom pods provide best flavor. If foam does not form, heat was too high or grind too coarse. Serve immediately for best taste and texture.
