Sweet, smoky, and just a little boozy, these peach bourbon BBQ glazed pork chops are perfect for summer with a sticky glaze that seals in moisture and flavor.
Ingredients
- 4 bone-in pork chops, about 1-inch thick
- 2 fresh ripe peaches, peeled and diced
- 1/2 cup bourbon whiskey
- 1/2 cup smoky BBQ sauce
- 1/4 cup packed brown sugar
- 2 tablespoons apple cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and freshly ground black pepper, to taste
- 1 tablespoon olive oil or vegetable oil
- Fresh thyme for garnish (optional)
Instructions
- Pat the pork chops dry with paper towels. Season both sides generously with salt, pepper, onion powder, and smoked paprika. Let rest at room temperature for 10 minutes.
- In a medium saucepan, combine diced peaches, bourbon, BBQ sauce, brown sugar, apple cider vinegar, and minced garlic. Bring to a gentle simmer over medium heat.
- Let the glaze bubble gently, stirring occasionally, until it thickens to a syrupy consistency, about 12-15 minutes. Add a splash of water or more bourbon if too thick.
- Optional: Strain the glaze for a smoother texture or leave peach chunks in for bursts of flavor.
- Heat olive oil in a heavy skillet over medium-high heat. Add pork chops and sear without moving for about 4 minutes until golden crust forms. Flip and cook another 3-4 minutes.
- Reduce heat to medium-low, brush a generous layer of glaze on each chop, and cook for another 2 minutes per side, spooning extra glaze over as it caramelizes.
- Check doneness: pork chops should reach an internal temperature of 145°F (63°C).
- Transfer pork chops to a plate and let rest for 5 minutes.
- Serve with remaining glaze spooned over and garnish with fresh thyme if desired.
Notes
Use bone-in pork chops for juicier meat. If using boneless chops, reduce cooking time slightly. Keep heat moderate when simmering glaze to avoid burning sugars. Let pork chops rest after cooking to retain juices. Fresh peaches are preferred over frozen or canned for best flavor. The glaze can be made ahead and reheated gently.
