Ingredients
- 2 tablespoons fresh rosemary, finely chopped
- 3–4 garlic cloves, minced
- 1/4 cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly cracked black pepper
- 4–6 bone-in lamb chops, about 1 inch thick (approximately 1.5 pounds or 700 grams)
Instructions
- In a medium mixing bowl, combine 2 tablespoons finely chopped fresh rosemary, 3-4 minced garlic cloves, 1/4 cup extra virgin olive oil, 2 tablespoons fresh lemon juice, 1 teaspoon lemon zest, 1 teaspoon kosher salt, and 1/2 teaspoon freshly cracked black pepper. Whisk everything together until well blended.
- Pat the lamb chops dry with paper towels. Place them in a shallow dish or resealable plastic bag. Pour the marinade over the chops, coating each piece evenly. Seal and refrigerate for at least 30 minutes, ideally 1-2 hours. If short on time, 15 minutes will add some flavor.
- Preheat the grill to about 400°F (204°C). If using charcoal, wait until coals are covered with white ash. Brush grates clean and oil lightly to prevent sticking.
- Place the lamb chops on the grill and cook for about 4-5 minutes per side for medium-rare (internal temperature 130°F / 54°C). Adjust time for thickness or preferred doneness. Use tongs to flip gently without piercing the meat.
- Remove chops from grill and let rest under foil for 5 minutes to allow juices to redistribute before serving.

Pat lamb chops dry before marinating for better sear. Marinate between 15 minutes to 2 hours; avoid over 4 hours to prevent texture changes. Use direct high heat for searing, then indirect heat if needed. Rest meat after grilling to keep it juicy. Leftover marinade can be brushed on after grilling for extra flavor. If no grill available, pan-sear in a hot cast iron skillet and finish in oven at 400°F for 5-7 minutes.
