Juicy, tender pork chops grilled with a sweet, smoky bourbon glaze that caramelizes beautifully, creating a slightly crisp, sticky coating that locks in flavor and moisture.
Ingredients
- 4 bone-in pork chops, about 1-inch thick
- 1/3 cup bourbon (80 ml)
- 1/4 cup brown sugar (50 g), packed
- 2 tablespoons soy sauce (30 ml)
- 1 tablespoon Dijon mustard (15 g)
- 2 cloves garlic, minced
- 1 tablespoon apple cider vinegar (15 ml)
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon olive oil (15 ml)
- Optional: pinch of smoked paprika
- Optional: dash of cayenne pepper
Instructions
- Make the bourbon glaze: In a medium saucepan over medium heat, combine bourbon, brown sugar, soy sauce, Dijon mustard, minced garlic, and apple cider vinegar. Stir to combine.
- Simmer gently for 8–10 minutes, stirring occasionally, until the glaze thickens slightly and becomes syrupy. Watch closely to avoid burning.
- Prep the pork chops: Pat pork chops dry with paper towels. Brush each chop lightly with olive oil and season with freshly ground black pepper.
- Preheat grill to about 400°F (204°C) over direct heat. Oil the grill grates lightly to prevent sticking.
- Grill the pork chops: Place chops on the grill and cook for about 4–5 minutes per side depending on thickness. Use tongs to flip gently.
- After flipping, brush generously with bourbon glaze and keep basting every couple of minutes as they cook until grill marks form and chops develop a deep golden-brown crust.
- Check doneness with a meat thermometer aiming for an internal temperature of 145°F (63°C).
- Let chops rest for 5 minutes after grilling to allow juices to redistribute.
- Serve: Spoon any remaining glaze over the chops just before serving.

Pat pork chops dry before grilling for a better sear. Start glazing after the first flip to prevent flare-ups. Use a meat thermometer to avoid overcooking. Let chops rest 5 minutes after grilling. Move chops to indirect heat if glaze starts to burn. For gluten-free, substitute soy sauce with tamari or coconut aminos. For lower alcohol, simmer bourbon longer before grilling.
