Ingredients
- 1 pound lean ground turkey (93/7 works best)
- 1 tablespoon olive oil
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt (plus more to taste)
- ¼ teaspoon black pepper
- ⅓ cup low-sodium chicken broth or water
- 1 tablespoon tomato paste
- 2 cups cooked brown rice or cauliflower rice
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup frozen or fresh corn kernels
- 1 cup cherry tomatoes, halved
- 1 large avocado, sliced
- ½ cup fresh cilantro, chopped
- ¼ cup crumbled cotija cheese or shredded Mexican cheese blend
- 1 lime, cut into wedges
- ½ cup plain Greek yogurt or sour cream
- ¼ cup fresh cilantro, packed (for dressing)
- Juice of 1 lime (for dressing)
- 1 small clove garlic (for dressing)
- ¼ teaspoon salt (for dressing)
- 2–3 tablespoons milk or water (to thin dressing)
Instructions
- Start the rice (if using): If making brown rice from scratch, start it first since it takes longer. For this recipe, 2 cups of cooked rice is plenty. If using cauliflower rice, sauté it in a separate pan while the turkey cooks.
- Cook the aromatics: Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
- Brown the turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for 5-7 minutes, stirring occasionally, until the turkey is no longer pink. If there’s excess liquid, drain it off.
- Season the meat: Sprinkle the chili powder, cumin, smoked paprika, oregano, salt, and pepper over the turkey. Stir to coat evenly. Add the tomato paste and chicken broth, then stir until the tomato paste dissolves. Let it simmer for 2-3 minutes until the liquid reduces slightly. Taste and adjust seasoning.
- Warm the beans and corn: While the turkey simmers, warm the black beans and corn in a small saucepan with a splash of water over medium heat for 2-3 minutes, or microwave them in separate bowls for 1 minute each. Season the beans with a pinch of salt and cumin if desired.
- Make the dressing (if using): Combine the Greek yogurt, cilantro, lime juice, garlic, and salt in a small blender or food processor. Blend until smooth, then add milk or water a tablespoon at a time until it reaches a pourable consistency. Taste and adjust.
- Assemble the bowls: Divide the cooked rice evenly among meal prep containers. Top each with a portion of the turkey taco meat, black beans, and corn. Add the cherry tomatoes, avocado slices, and a sprinkle of cotija cheese. Garnish with fresh cilantro and a lime wedge. If using the dressing, drizzle it over the top or pack it separately.
- Cool and store: Let the bowls cool completely before putting the lids on to prevent condensation. Once cooled, seal and refrigerate for up to 4 days.
Notes
For best results, add avocado and dressing just before eating to keep them fresh. The bowls taste even better on day two as the flavors meld. You can freeze the turkey taco meat separately for up to 3 months. If reheating, remove avocado and lime wedge first, then microwave for 1-2 minutes.
