- 1/2 cup shredded lettuce or cabbage
- 1/4 cup sour cream or Greek yogurt
- 1/4 cup shredded cheddar cheese
- Hot sauce, to taste
Instructions
- Cook the rice (if using dry rice): Rinse 1 cup of jasmine rice under cold water until the water runs clear. Add to a medium saucepan with 1 3/4 cups water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork. This yields about 3 cups of cooked rice, enough for 4-5 bowls.
- Prep the vegetables: Dice the onion, mince the garlic, halve the cherry tomatoes, and chop the cilantro. Drain and rinse the black beans. If using fresh corn, cut the kernels off the cob. If using frozen, thaw them in a colander under warm water. Set everything aside in small bowls.
- Cook the turkey: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 3-4 minutes, until translucent.
