Description
These Easy Turkey Ranch Pinwheel Sandwiches are the perfect solution for busy days when lunch needs to happen fast. Made with cream cheese, turkey, cheese, and ranch seasoning, these pinwheels are ready in 15 minutes and are a crowd-pleaser for lunchboxes, parties, or a light dinner.
Ingredients
Scale
- 8 oz cream cheese, softened to room temperature
- 1 packet (1 oz) ranch seasoning mix
- 4 large flour tortillas (burrito-sized, about 10 inches)
- 8 slices deli turkey breast
- 4 slices provolone or cheddar cheese
- 1/4 cup shredded lettuce (optional)
- 1/4 cup finely diced bell pepper (optional)
Instructions
- Soften the cream cheese: Take the cream cheese out of the fridge at least 30 minutes before you start. If short on time, microwave in 10-second bursts until soft but not melted.
- Mix the ranch spread: In a medium bowl, combine the softened cream cheese and ranch seasoning packet. Stir until completely smooth. Taste and adjust if needed.
- Prep your tortillas: Lay one tortilla flat on your cutting board. If stiff, warm in the microwave for 10 seconds to make more pliable.
- Spread the cream cheese mixture: Using a spatula or butter knife, spread an even layer of the ranch cream cheese over the entire tortilla, leaving about a half-inch border around the edges.
- Layer the turkey and cheese: Place two slices of turkey flat on the cream cheese, slightly overlapping if needed. Add one slice of cheese on top. If using lettuce or bell peppers, sprinkle them evenly over the cheese now.
- Roll it tight: Starting from one edge, carefully roll the tortilla into a tight log. Keep even pressure as you roll, tucking the filling in as you go.
- Wrap and chill: Tightly wrap each rolled tortilla in plastic wrap. Twist the ends like a candy wrapper to keep the roll snug. Refrigerate for at least 30 minutes.
- Slice and serve: Unwrap the chilled rolls and place on a cutting board. Using a sharp serrated knife, slice each roll into 1-inch pinwheels. Arrange on a platter and serve cold or at room temperature.
Notes
Don’t skip the chilling step—it sets the cream cheese and makes slicing clean. Use a serrated knife for clean cuts. Keep fillings dry to avoid sogginess. For best results, make the night before as flavors deepen overnight.
