  • 8 oz cream cheese, softened
  • 1 packet ranch seasoning mix
  • 2 tablespoons milk
  • 810 slices deli turkey
  • 4 slices provolone or Swiss cheese
  • 1 cup fresh spinach leaves, washed and dried
  • 1/2 cup shredded carrots
  • Optional add-ins: sliced bell peppers, cucumber strips, avocado, or roasted red peppers

Instructions

  1. Make the cream cheese spread: In a medium bowl, combine 8 oz softened cream cheese, 1 packet ranch seasoning, and 2 tablespoons milk. Beat with a hand mixer on medium speed until smooth and fluffy, about 2 minutes. Scrape down the sides once. If too thick, add another teaspoon of milk.
  2. Prep your tortillas: Lay one large flour tortilla flat on your cutting board. If cold, microwave for 10 seconds to make pliable. Spread about 2-3 tablespoons of the cream cheese mixture evenly over the entire surface, leaving a 1-inch border around the edges.
  3. Layer the fillings: Place 2 slices of provolone cheese over the cream cheese, overlapping slightly. Layer 2-3 slices of turkey on top. Add a handful of fresh spinach leaves and a sprinkle of shredded carrots. Keep fillings even and about 1/4 inch thick.
  4. Roll it up tight: Starting from the bottom edge, roll the tortilla tightly away from you, using fingers to tuck and hold fillings in place. Roll firmly but not so tight that fillings squish out. Press gently to seal the seam.
  5. Wrap and chill: Tightly wrap the rolled tortilla in plastic wrap, twisting the ends like a candy wrapper. Refrigerate for at least 30 minutes, or up to 24 hours.
  6. Slice into pinwheels: Remove plastic wrap. Using a sharp serrated knife, slice the roll into 1-inch pieces using a gentle sawing motion. Wipe knife clean between cuts. You should get about 8-10 pinwheels per tortilla.
  7. Assemble the bento box: Arrange 4-5 pinwheels in one compartment. Fill other compartments with fresh fruit, veggie sticks, and a crunchy element. Add a small container of dipping sauce if desired.

Notes

Chilling is essential for clean slicing. Pat all veggies dry to prevent sogginess. For best results, slice only what you plan to eat that day. The pinwheels taste even better the next day as flavors meld.
