Description
A quick and easy weeknight dinner featuring perfectly seared salmon coated in a sweet and savory honey garlic glaze, served alongside tender roasted broccoli with caramelized edges. This recipe is simple, uses everyday ingredients, and delivers restaurant-quality results in under 30 minutes.
Ingredients
- ¼ cup honey
- 3 tablespoons soy sauce
- 4 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch mixed with 2 teaspoons water (slurry)
- 4 salmon fillets (about 6 ounces each)
- Salt and pepper to taste
- 1 tablespoon olive oil (for searing salmon)
- 2 heads broccoli, cut into florets
- 2 tablespoons olive oil (for roasting broccoli)
- Salt and pepper to taste
- ½ teaspoon red pepper flakes (optional)
Instructions
- Preheat oven to 400°F (200°C). Wash and dry broccoli florets, cut into uniform 1-1½ inch pieces. Toss on a baking sheet with 2 tablespoons olive oil, salt, pepper, and optional red pepper flakes. Spread in a single layer.
- In a small bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, and sesame oil. In a separate tiny bowl, mix cornstarch with water until smooth. Set both aside.
- Roast broccoli for 15 minutes, shaking the pan halfway through, until tender with charred edges.
- Pat salmon fillets dry with paper towels. Season both sides with salt and pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. When oil shimmers, place salmon skin-side down (if using skin-on). Cook undisturbed for 4 minutes.
- Flip salmon carefully. Cook for 2 more minutes. Pour honey garlic mixture around the salmon (not directly on top). Let bubble for 1 minute, then stir in cornstarch slurry. Sauce will thicken quickly. Spoon glaze over salmon and cook for another 1-2 minutes until salmon is just cooked through and flakes easily.
- Remove broccoli from oven. Plate salmon with broccoli, drizzle remaining pan sauce over everything. Serve immediately.
Notes
Pat salmon dry for best sear. Watch heat to prevent honey from burning. Cornstarch slurry is essential for thick, glossy glaze. Fresh garlic is recommended over jarred. Broccoli can be swapped with asparagus, green beans, or Brussels sprouts. Leftovers keep in fridge for up to 3 days; reheat gently on stovetop.
