  • 1.5 lbs (680g) smoked sausage (beef or pork, like kielbasa or andouille)
  • 3 large bell peppers (mixed colors), cut into 1.5-inch chunks
  • 1 large red onion, cut into chunks
  • 3 tablespoons (45ml) olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Optional: dipping sauces (spicy mustard, ranch, BBQ sauce)

Instructions

  1. Prep the ingredients: Cut smoked sausage into 1.5-inch chunks. Cut bell peppers into 1.5-inch squares. Cut red onion into chunks, separating layers. Mince garlic.
  2. Make the marinade: In a large bowl, combine olive oil, minced garlic, smoked paprika, dried oregano, salt, and pepper. Whisk together.
  3. Toss everything: Add sausage, peppers, and onions to the bowl. Toss until evenly coated.
  4. Thread the skewers: Alternate sausage, pepper, and onion on skewers, leaving a little space between pieces. Makes 8-10 skewers.
  5. Preheat grill to medium-high heat (375-400°F / 190-200°C). Clean and oil grates.
  6. Grill skewers for 4-5 minutes per side, until sausage is heated through with charred edges and peppers are tender but still have bite.
  7. Rest for 2 minutes, then serve hot with dipping sauces.

Notes

For even cooking, cut ingredients into uniform sizes. If peppers char too fast, move skewers to cooler part of grill or pre-cook peppers in microwave for 60 seconds. Let skewers rest 2 minutes before serving.
