Easy Small-Batch Chocolate Chip Cookies: No Chilling Required

  • Author: Sarah Wasserman
  • Total Time: 20 minutes
  • Yield: 6 to 8 cookies 1x

Description

These easy small-batch chocolate chip cookies come together in one bowl, require no chilling, and bake in under 15 minutes. Perfect for late-night cravings or lazy Sundays, they deliver crispy edges and soft, chewy centers every time.

Ingredients

Scale
  • 4 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 1 large egg, room temperature
  • ½ teaspoon vanilla extract
  • ¾ cup all-purpose flour, spooned and leveled
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup semi-sweet chocolate chips, plus more for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Line a small baking sheet with parchment paper or a silicone baking mat.
  2. Melt the butter in a microwave-safe bowl in 20-second intervals until fully melted. Let it cool for 2 minutes.
  3. In a medium mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth and slightly thickened, about 30 seconds.
  4. Add the egg and vanilla extract. Whisk until fully combined and the mixture looks pale and creamy, about 1 minute.
  5. In a small bowl, whisk together the flour, baking soda, and salt.
  6. Add the flour mixture to the wet ingredients. Fold gently with a rubber spatula or wooden spoon until just combined.
  7. Fold in the chocolate chips. Reserve about a tablespoon of chips to press onto the tops of the dough balls before baking.
  8. Scoop the dough into 6 to 8 equal balls (about 1.5 tablespoons each). Place them on the prepared baking sheet, spacing about 2 inches apart.
  9. Press the reserved chocolate chips onto the tops of each dough ball.
  10. Bake immediately for 9 to 11 minutes, until edges are golden brown and centers are slightly puffed and cracked.
  11. Let the cookies rest on the baking sheet for 5 minutes.
  12. Transfer to a wire rack to cool completely, or serve warm.

Notes

Let melted butter cool for at least 2 minutes before adding the egg to avoid scrambling. Spoon and level the flour for accurate measurement. Start checking cookies at 8 minutes; they continue to set on the hot pan. For best results, use room temperature egg. If dough is too soft, chill for 15 minutes.
