These honey garlic black-eyed peas are a set-it-and-forget-it slow cooker recipe that transforms humble dried peas into a sticky-sweet, savory side dish perfect for New Year’s or any day. Ingredients
- 1 pound dried black-eyed peas (about 2 cups)
- 3 cups low-sodium chicken broth (or vegetable broth for vegetarian)
- 1 medium yellow onion, diced (about 1 cup)
- 4 cloves garlic, minced
- 1/3 cup honey
- 1/4 cup low-sodium soy sauce (or tamari for gluten-free)
- 2 tablespoons tomato paste
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil (optional)
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper, freshly ground
- 1/4 teaspoon cayenne pepper (optional)
- For garnish: 2 green onions, sliced; 1 tablespoon sesame seeds, toasted; fresh cilantro or parsley (optional)
Instructions
- Rinse the black-eyed peas in a fine-mesh strainer under cold water for about 30 seconds. Pick out any shriveled peas or small stones.
- Dice the onion and mince the garlic. Set aside together.
- In a small bowl, whisk together the honey, soy sauce, tomato paste, rice vinegar, smoked paprika, black pepper, and cayenne (if using) until smooth.
- Layer the rinsed black-eyed peas evenly in the bottom of a 4- to 6-quart slow cooker. Add the diced onion and minced garlic on top. Pour the honey garlic sauce over everything, then add the 3 cups of chicken broth. Do not stir.
- Cook on low for 6-7 hours or on high for 3-4 hours, until the peas are tender but not falling apart.
- At the 6-hour mark, check for doneness: the peas should give easily when squished between your fingers. If still chalky, cook another 30 minutes and check again.
- Once done, stir in the sesame oil (if using). Taste and adjust seasoning, adding more black pepper if desired. If the sauce is too thin, cook uncovered on high for 15-20 minutes to thicken.
- Garnish with sliced green onions, sesame seeds, and fresh herbs. Serve hot over rice, with crusty bread, or straight from the bowl.
Notes
For a richer flavor, bloom the tomato paste in a hot pan for 2 minutes before adding to the sauce. If using canned black-eyed peas, reduce cooking time to 2-3 hours on low. To thicken the sauce, mash a few peas against the side of the slow cooker and stir. Leftovers taste even better the next day and freeze well for up to 3 months.
