Ingredients
- 6 medium apples, peeled, cored, and sliced (about 6 cups) — I use a mix of Honeycrisp and Granny Smith
- 1/3 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract

- 2 tablespoons all-purpose flour
- 1 cup old-fashioned rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small cubes
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Place your cast-iron skillet in the oven while it heats up.
- Prepare the apples: Peel, core, and slice your apples into 1/4-inch thick slices. In a large mixing bowl, toss the apple slices with the granulated sugar, brown sugar, lemon juice, vanilla extract, cinnamon, nutmeg, cloves, and flour. Let them sit for about 10 minutes.
- Make the thick oat streusel: In a medium mixing bowl, whisk together the rolled oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Add the cold butter cubes. Using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse sand with some pea-sized butter pieces. If using nuts, fold them in at the end.
- Assemble the crisp: Carefully remove the hot skillet from the oven. Pour the apple mixture into the skillet and spread it into an even layer. Sprinkle the streusel topping evenly over the apples. Do not press it down.
- Bake: Place the skillet on a baking sheet. Bake for 40-45 minutes, or until the filling is bubbly around the edges and the topping is deep golden brown. If the topping is browning too quickly, tent loosely with foil for the last 10 minutes.
- Cool slightly before serving: Let the crisp rest for at least 10-15 minutes. Serve warm.
