This easy sheet pan sausage and potato dinner is a quick, one-pan meal featuring crispy sausage and tender, golden potatoes. Perfect for busy weeknights, it requires minimal effort and delivers maximum flavor with simple ingredients.
Ingredients
- 12–14 oz smoked sausage or kielbasa, sliced on bias into 1/2-inch pieces
- 1.5 lbs baby potatoes (red and gold), cut into 1-inch pieces
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Wash and cut baby potatoes into 1-inch pieces (halve or quarter).
- Slice sausage on bias into 1/2-inch thick rounds.
- Mince garlic.
- In a large mixing bowl, combine potatoes, sausage, minced garlic, olive oil, rosemary, thyme, smoked paprika, salt, and pepper. Toss until evenly coated.
- Spread mixture in a single layer on a rimmed sheet pan (lined with parchment paper for easy cleanup).
- Roast for 25-30 minutes, stirring halfway through, until potatoes are fork-tender and golden, and sausage is browned and crispy.
- Optional: Broil for 2-3 minutes at the end for extra crispiness.
- Garnish with fresh parsley if desired and serve hot.
Notes
For extra crispy potatoes, ensure they are in a single layer and not overcrowded. If using a dark sheet pan, check a few minutes early. Leftovers can be stored in an airtight container in the fridge for up to 4 days. Reheat in a skillet or oven at 375°F for about 10 minutes to regain crispiness.
