A cozy and flavorful sheet pan dinner combining sausages, apples, and root vegetables, perfect for a quick and comforting fall meal.

- 1 pound (450g) sausages (Italian, bratwurst, or chicken sausage)
- 2 medium apples, cored and sliced thick (about 1/2-inch thick), preferably Honeycrisp or Fuji
- 2 medium carrots, peeled and sliced into 1/2-inch rounds
- 1 medium sweet potato, peeled and cubed (about 1-inch pieces)
- 1 small red onion, cut into wedges
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
- 2 cloves garlic, minced (optional)
- 1/2 teaspoon ground cinnamon
- Salt and freshly cracked black pepper to taste
- 1 tablespoon maple syrup (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Slice the apples into thick wedges, peel and chop the carrots and sweet potato, and cut the onion into wedges. Set aside.
- In a large mixing bowl, combine olive oil, minced garlic, fresh thyme leaves, ground cinnamon, salt, and pepper. Whisk together until well blended.
- Add the chopped carrots, sweet potato, red onion, and apple slices to the bowl. Toss everything thoroughly to coat with the seasoning mix.
- Spread the veggies and apples evenly on a large rimmed sheet pan, making sure there is space between pieces to roast rather than steam.
- Nestle the sausages on top of the veggies and apples, spacing them out evenly.
- Roast in the oven for 25 minutes, then remove and use tongs to flip the sausages and gently stir the veggies.
- Return to the oven for another 15-20 minutes until sausages are cooked through (internal temperature 160°F/71°C) and the veggies are tender and caramelized.
- During the last 5 minutes of roasting, drizzle maple syrup over the apples and sausages for a glossy, sweet finish (optional).
- Let the sheet pan dinner rest for 5 minutes before serving.
Notes
Do not overcrowd the pan to ensure crispiness. Slice apples thick to prevent mushiness. Use a meat thermometer to ensure sausages reach 160°F (71°C). If sausages brown too quickly, tent pan with foil. Maple syrup glaze is optional but adds a lovely sweetness.
