A quick and easy sheet pan meal featuring tender salmon fillets glazed with a sweet-tangy balsamic reduction and perfectly roasted vegetables. This wholesome dinner is fuss-free, flavorful, and adaptable for busy weeknights.
Ingredients
- 4 salmon fillets, skin-on, about 6 ounces (170 grams) each
- 1/4 cup (60 ml) balsamic vinegar
- 2 tablespoons (30 ml) honey or maple syrup
- 3 tablespoons (45 ml) olive oil
- 2 cloves garlic, minced
- 1 teaspoon (5 ml) Dijon mustard
- 4 cups (600 grams) mixed vegetables (broccoli florets, baby carrots, red bell peppers sliced, cherry tomatoes)
- Salt and pepper to taste
- Fresh herbs (optional): chopped parsley or thyme for garnish
Instructions
- Preheat your oven to 400°F (200°C). Line a sheet pan with parchment paper or a silicone baking mat for easy cleanup.
- Prepare the balsamic glaze: In a small saucepan over medium heat, combine balsamic vinegar, honey or maple syrup, minced garlic, and Dijon mustard. Stir occasionally and bring to a simmer. Reduce gently for 5–7 minutes until slightly thickened and coats the back of a spoon.
- Toss the mixed vegetables in 2 tablespoons olive oil, salt, and pepper. Spread evenly on the sheet pan, leaving space for the salmon fillets.
- Place the salmon fillets skin-side down on the sheet pan among the vegetables. Brush each fillet generously with the balsamic glaze, reserving some glaze for later. Season lightly with salt and pepper.
- Roast in the oven for 12–15 minutes. Add cherry tomatoes around the 10-minute mark to avoid overcooking.
- Remove the sheet pan from the oven, brush the salmon once more with the reserved balsamic glaze, and let rest for 2 minutes before serving.
Notes
Use fresh or fully thawed salmon for best results. Reduce the balsamic glaze separately before brushing to avoid watery texture. Add softer vegetables like cherry tomatoes later in cooking to prevent mushiness. For extra crispy salmon skin, broil for 1–2 minutes at the end but watch carefully to avoid burning. Leftovers keep well refrigerated for up to 2 days and reheat gently in the oven.
