  • 2 cups baby carrots
  • 1 cucumber (sliced)
  • 2 apples (sliced, tossed in lemon juice)
  • 2 cups grapes or berries
  • 1 bell pepper (sliced into strips)
  • 1 cup cherry tomatoes
  • 1/4 cup dark chocolate chips
  • 1 cup pretzels or popcorn
  • 1/2 cup dried fruit (mango, raisins, cranberries)
  • 1 batch banana zucchini muffins with chocolate chips

  • 1/2 cup cream cheese (for wraps)

  • 1 cup crackers or pretzels (for bento box)
  • 4 large whole wheat tortillas (for quesadillas)
  • 2 cups shredded Mexican blend cheese (for quesadillas)
  • 1 cup black beans and corn (for quesadillas)
  • 1/2 cup salsa or sour cream (for dipping)

Instructions

  1. Sunday Prep: Cook chicken breasts (roast or poach) and shred or cube. Boil 6-8 eggs. Slice cheddar cheese into small squares. Roll deli turkey slices into logs and slice into pinwheels or cut into quarters. Wash and dry grapes. Portion crackers into small bags.
  2. Morning Assembly (DIY Lunchable): Grab a bento box. Add turkey and cheese in one compartment, crackers in another, grapes in the third. Add a small treat like dark chocolate chips. Add an ice pack.
  3. Sunday Prep (Wraps): Spread cream cheese on a tortilla, layer turkey, provolone, and spinach, then roll tightly. For a second wrap, spread hummus, add shredded carrots, cucumber strips, and bell pepper. Wrap each in plastic wrap and refrigerate.
  4. Morning Assembly (Wraps): Grab a pre-made wrap, slice in half or into pinwheels. Place in lunch box. Add baby carrots and a small container of ranch or hummus. Add berries.

  10. Morning Assembly (Quesadillas): Grab a few wedges and place in lunch box. Add a small container of salsa or sour cream. Add sliced bell peppers and grapes.

Notes
