Description
A perfectly portioned apple crisp for two, featuring tender caramel-coated apples under a buttery oat crumble, finished with a drizzle of salted caramel sauce. Ready in about 35 minutes, this cozy dessert is ideal for a quiet weeknight or a romantic date night.
Ingredients
- 2 medium apples (about 300g total), peeled, cored, and sliced into 1/4-inch thick pieces
- 2 tablespoons granulated sugar (25g)
- 1 tablespoon brown sugar (12g), packed
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg (optional)
- 1 tablespoon all-purpose flour (8g)
- 1 teaspoon lemon juice
- 1/4 cup store-bought or homemade salted caramel sauce (60ml)
- 1/3 cup old-fashioned rolled oats (30g)
- 1/3 cup all-purpose flour (40g)
- 1/4 cup brown sugar (50g), packed
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- 3 tablespoons unsalted butter (42g), cold and cut into small cubes
- 2 tablespoons chopped pecans or walnuts (optional)
- Vanilla ice cream or whipped cream (for serving, optional)
- Extra salted caramel sauce (for serving, optional)
- Flaky sea salt (for serving, optional)
Instructions
- Preheat your oven to 350°F (175°C). Place a baking sheet on the middle rack.
- Peel, core, and slice apples into 1/4-inch thick pieces. Place in a medium mixing bowl.
- Add granulated sugar, brown sugar, cinnamon, nutmeg (if using), flour, and lemon juice to the apples. Toss to coat evenly. Let sit for 5 minutes.
- In a separate small bowl, combine oats, flour, brown sugar, cinnamon, and salt. Whisk together.
- Add cold butter cubes to the dry mixture. Using a pastry cutter, fork, or fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces. Stir in nuts if using.
- Divide the apple mixture evenly between two 8-ounce ramekins or a small baking dish (about 5×7 inches). Pour 2 tablespoons of salted caramel sauce over each portion.
- Sprinkle the topping evenly over the apples, pressing down gently.
- Place ramekins on the preheated baking sheet and bake for 25-30 minutes, until topping is golden brown and apples are bubbling. Tent with foil if browning too quickly.
- Let cool on a wire rack for 5-10 minutes before serving.
- Serve warm, topped with vanilla ice cream or whipped cream, extra caramel sauce, and a pinch of flaky sea salt if desired.
Notes
Let the crisp rest for 5-10 minutes after baking to allow the filling to set. Use cold butter for a crumbly topping. Slice apples evenly for uniform cooking. For a gluten-free version, use certified gluten-free oats and a 1:1 gluten-free flour blend. For a vegan version, use vegan butter or coconut oil and dairy-free caramel sauce. The recipe can be assembled (without caramel) up to 24 hours in advance and refrigerated; add caramel and bake as directed, adding 5 minutes to baking time.
