Description

A quick and easy breakfast casserole made with canned cinnamon rolls and a pumpkin custard, topped with a cream cheese drizzle. It’s the perfect comfort food for busy mornings or holiday brunches.

  • 2 cans (12.4 ounces each) canned cinnamon rolls with cream cheese frosting
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 4 large eggs, at room temperature
  • ½ cup heavy cream
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ¼ cup packed brown sugar
  • ¼ teaspoon salt
  • 4 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 2 to 3 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking dish with butter or non-stick spray.
  2. Open both cans of cinnamon rolls. Set the frosting packets aside. Cut each cinnamon roll into quarters.
  3. Arrange the cinnamon roll pieces evenly in the prepared baking dish.
  4. In a medium bowl, whisk together pumpkin puree, eggs, heavy cream, pumpkin pie spice, vanilla extract, brown sugar, and salt until smooth.
  5. Pour the pumpkin custard evenly over the cinnamon roll pieces. Gently press down with a rubber spatula to help the custard seep in. Let sit for 5 minutes.
  6. Bake for 25 to 30 minutes, until the top is golden brown and the center is set but slightly jiggly. Tent with foil if browning too fast.
  7. While the casserole bakes, make the cream cheese drizzle: In a small bowl, beat softened cream cheese until smooth. Add powdered sugar, 2 tablespoons milk, and ½ teaspoon vanilla. Whisk until smooth and pourable. Add more milk if needed.
  8. Let the casserole cool for 5 to 10 minutes. Drizzle the cream cheese mixture over the top.
  9. Serve warm.

Notes

Don’t overbake; the custard should be slightly jiggly when done. Let the assembled casserole rest for 5 minutes before baking for best texture. Use room temperature ingredients for smoother mixing. Double the cream cheese drizzle if desired.
