Description

These creamy, make-ahead pumpkin overnight oats are a cozy fall breakfast that comes together in just 10 minutes. Perfect for busy mornings, they’re packed with warm spices and wholesome ingredients.


Ingredients

  • 2 cups rolled oats (use certified gluten-free if needed)
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1 ½ cups milk of choice (whole milk, oat milk, or almond milk)
  • ½ cup plain Greek yogurt (use dairy-free if needed)
  • 34 tablespoons maple syrup
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • Pinch of salt
  • Optional toppings: chopped pecans or walnuts, pumpkin seeds, drizzle of nut butter, extra maple syrup

Instructions

  1. In a medium bowl or liquid measuring cup, whisk together the pumpkin puree, milk, Greek yogurt, maple syrup, and vanilla extract until smooth and no orange streaks remain.
  2. Add the rolled oats, chia seeds, cinnamon, ginger, nutmeg, cloves, and salt. Stir until the oats are evenly coated and no dry pockets remain.
  3. Divide the mixture evenly among 4 mason jars or airtight containers (16-ounce size), leaving about ½ inch of headspace.
  4. Screw on the lids and refrigerate for at least 6 hours, preferably overnight.
  5. Before serving, stir the oats. If too thick, add a splash of milk. Add desired toppings and enjoy cold, or microwave for 45-60 seconds for warm oats.

Notes

These oats keep well in the fridge for up to 5 days. For best texture, eat by day 4. Do not freeze. For a vegan version, swap Greek yogurt for coconut yogurt and use plant-based milk. For a protein-packed version, add one scoop of vanilla or unflavored protein powder with an extra ¼ cup of milk.
