  • 1 cup (120g) all-purpose flour
  • 1 cup (245g) pumpkin purée
  • ¾ cup (150g) packed brown sugar
  • 2 large eggs, room temperature
  • ⅓ cup (80ml) vegetable oil
  • ¼ cup (60ml) milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • ½ cup (60g) optional mix-ins (chocolate chips, chopped pecans, or dried cranberries)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, rolled oats, brown sugar (breaking up clumps), baking soda, baking powder, cinnamon, nutmeg, ginger, and salt until evenly distributed.
  3. In a medium bowl, whisk together pumpkin purée, eggs, vegetable oil, milk, and vanilla extract until smooth and glossy.
  4. Pour wet ingredients into dry ingredients. Fold gently with a rubber spatula until just combined—do not overmix; a few lumps are fine.
  5. If using, fold in mix-ins with no more than 5 gentle folds.
  6. Divide batter evenly among the 12 muffin cups, filling almost to the top. Do not flatten the batter.
  7. Bake for 18-22 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. Rotate pan halfway through baking.
  8. Cool in the pan for 5 minutes, then transfer muffins to a wire rack to cool completely.

Notes

Do not overmix the batter to avoid dense muffins. Use room temperature ingredients for best results. Check pumpkin purée for excess water and blot if needed. Fill muffin cups generously for domed tops. Cool completely before storing to prevent sogginess.
