  • 8 large eggs
  • 2 cups whole milk
  • 1 teaspoon salt

  • 6 cups cubed bread (stale or day-old preferred)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter (for greasing)
  • ¼ cup chopped green onions or fresh chives (optional, for garnish)

Instructions

  1. Brown the sausage: Heat a large skillet over medium-high heat. Add the sausage and break it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes. Transfer to a plate lined with paper towels to drain and cool.
  2. Cube the bread: If not already cubed, cut bread into 1-inch cubes. You’ll need about 6 cups.
  3. Whisk the egg mixture: In a large mixing bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder until fully combined and slightly frothy.
  4. Grease the baking dish: Rub the inside of a 9×13-inch baking dish with butter or use non-stick spray.
  5. Layer the ingredients: Spread the cubed bread evenly in the dish. Sprinkle the cooked sausage over the bread, then top with both cheeses.
  6. Pour the egg mixture: Slowly pour the egg mixture over the entire dish, ensuring all bread cubes are saturated. Gently press the bread down with a spatula or your hands.
  7. Cover and refrigerate: Cover tightly with plastic wrap or foil and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  8. Bake the casserole: Preheat oven to 350°F. Remove casserole from fridge and let sit on counter for 15-20 minutes. Cover with foil and bake for 30 minutes. Remove foil and bake another 20-25 minutes until golden brown and center is set (knife inserted comes out clean).
  9. Rest before serving: Let casserole rest for 5-10 minutes. Garnish with green onions or chives if desired. Serve warm.
