  • 1/3 cup honey
  • 1 1/2 cups rolled oats
  • 1/2 cup vanilla protein powder
  • 1/3 cup dark chocolate chips
  • 1 tablespoon chia seeds (optional)
  • Pinch of sea salt

Instructions

  1. Combine the wet ingredients. In a large mixing bowl, add the peanut butter and honey. Stir them together until fully combined and smooth, about 30 seconds.
  2. Add the dry ingredients. Pour in the rolled oats, protein powder, chia seeds (if using), and a pinch of salt. Stir until no dry spots remain. The mixture should be thick, slightly sticky, and hold together when pressed. If too dry, add a teaspoon of honey or a splash of milk. If too wet, add a tablespoon more oats or protein powder.
  3. Fold in the chocolate chips. Gently stir in the chocolate chips until evenly distributed. Do not overmix.
  4. Chill the mixture. Refrigerate the bowl for 15-20 minutes to make rolling easier.
  5. Roll into balls. Line a baking sheet or plate with parchment paper. Using a cookie scoop or tablespoon, scoop out portions and roll into smooth balls. Dampen hands with water if sticky. You should get about 18-20 balls.
  6. Let them set. Place the rolled balls on the parchment-lined sheet and refrigerate for at least 30 minutes to firm up.
  7. Store and enjoy. Transfer to an airtight container and keep in the refrigerator for up to two weeks.

Notes

If mixture is too dry, add more honey or a splash of milk. If too wet, add more oats or protein powder. Wet hands help prevent sticking when rolling. For best texture, chill before rolling and after shaping. Use creamy peanut butter for best results; avoid natural peanut butter that is separated and oily.
