These easy no-bake peanut butter granola bites are a quick, wholesome snack perfect for lunchboxes, featuring a chewy texture with crispy edges and natural sweetness from honey and peanut butter.

- 2 cups old-fashioned rolled oats (180 g)
- 1 cup natural peanut butter (250 g), creamy or crunchy
- 1/3 cup honey (113 g), can substitute maple syrup for vegan option
- 2 tbsp ground flaxseed (14 g), can substitute chia seeds or hemp seeds
- 1 tsp vanilla extract (5 ml)
- 1/4 cup mini chocolate chips (optional, 45 g)
- Pinch of sea salt
Instructions
- Line a baking sheet or large plate with parchment paper and set aside.
- In a medium saucepan over low heat, combine peanut butter and honey. Stir constantly to prevent burning until smooth and runny, about 3-5 minutes. Remove from heat immediately once combined.
- Stir in vanilla extract and a pinch of sea salt.
- In a large bowl, combine rolled oats, ground flaxseed, and mini chocolate chips if using. Stir gently to distribute evenly.
- Pour the warm peanut butter and honey mixture over the oat mixture. Fold together with a wooden spoon or spatula until oats are fully coated and mixture is sticky but manageable.
- Using hands or a small cookie scoop (about 1 tablespoon), scoop and press mixture into tight balls or slightly flattened discs. Place on prepared parchment paper.
- Chill in the refrigerator for at least 30 minutes to set.
- Store granola bites in an airtight container in the fridge for up to 7 days or freeze for longer storage.
Notes
Keep stove on low heat and stir constantly to avoid burning peanut butter mixture. Chill mixture if too sticky before shaping. Use certified gluten-free oats for gluten-free version. Substitute honey with maple syrup for vegan diet. Ground flaxseed can be swapped with chia or hemp seeds.
