Easy No-Bake Patriotic Flag Icebox Cake Recipe for 4th of July Celebration

  • Author: Sarah Wasserman
  • Total Time: 6 hours 15 minutes
  • Yield: 8 servings 1x

Description

A quick and festive no-bake dessert featuring layers of whipped cream, crispy cookies, and fresh berries arranged in a patriotic red, white, and blue flag pattern. Perfect for summer celebrations and easy to prepare ahead.

Ingredients

Scale
  • 16 oz (450 g) heavy whipping cream, cold
  • 1/4 cup (30 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package (about 10 oz / 280 g) graham crackers or thin, crispy cookies
  • 1 cup (150 g) fresh strawberries, sliced
  • 1 cup (150 g) fresh blueberries
  • Optional: a handful of raspberries or blackberries

Instructions

  1. Chill your mixing bowl and beaters in the fridge or freezer for about 10 minutes.
  2. Pour 16 oz (450 g) cold heavy whipping cream into the chilled bowl. Add 1/4 cup (30 g) powdered sugar and 1 teaspoon vanilla extract.
  3. Beat on medium-high speed for 3-5 minutes until soft peaks form, avoiding overwhipping.
  4. Spread a thin layer (about 1/4 cup / 60 ml) of whipped cream evenly on the bottom of a 9×13-inch (23×33 cm) glass or clear plastic dish.
  5. Place graham crackers or cookies in a single layer on top of the cream, breaking gently to fit if needed.
  6. Spread about 1 cup (240 ml) of whipped cream evenly over the cookies.
  7. Repeat layering cookies and whipped cream until about half the cookies and cream are used, finishing with a cream layer (3-4 layers total).
  8. Arrange sliced strawberries in stripes on one side of the top layer and blueberries on the other side to create the patriotic flag pattern.
  9. Use remaining whipped cream to fill in the white stripes between the fruit rows.
  10. Cover the cake with plastic wrap and refrigerate for at least 6 hours, ideally overnight, to let cookies soften and flavors meld.

Notes

Chill mixing bowl and beaters before whipping cream for better results. Stop whipping at soft peaks to avoid grainy texture. Use sturdy cookies that soften but don’t become mushy. Frozen berries can be used if thawed and drained well. For faster chilling, freeze uncovered for 1-2 hours then cover. Store leftovers refrigerated up to 3 days; best eaten within 1 day to keep layers distinct.
