Description

Quick and easy no-bake chocolate oat cookies perfect for school lunches and snacks, made with simple pantry staples and no oven required.


Ingredients

  • 1 ½ cups old-fashioned rolled oats (135 g)
  • ¼ cup unsweetened cocoa powder (25 g)
  • ½ cup peanut butter, creamy or chunky (125 g)
  • ⅓ cup honey or maple syrup (80 ml)
  • 4 tbsp unsalted butter (57 g)
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional add-ins: chopped nuts (walnuts, pecans), mini chocolate chips, flaxseed or chia seeds

Instructions

  1. Line your baking sheet with parchment paper and set aside.
  2. In a medium saucepan over low heat, melt the butter, peanut butter, and honey together, stirring frequently until smooth and glossy, about 3-4 minutes.
  3. Remove from heat and stir in vanilla extract and a pinch of salt.
  4. In a large mixing bowl, combine the rolled oats and unsweetened cocoa powder, stirring to evenly distribute the cocoa.
  5. Pour the warm peanut butter mixture over the oats and cocoa, mixing thoroughly until the oats are fully coated and the mixture is thick and slightly sticky.
  6. Drop spoonfuls of the cookie mixture onto the prepared baking sheet using a heaping tablespoon or small ice cream scoop, flatten slightly with the back of the spoon.
  7. Let the cookies cool at room temperature until firm, about 30 minutes, or chill in the fridge for 10-15 minutes if desired.
  8. Once set, transfer the cookies to an airtight container for storage.

Notes

If the mixture is too runny, add more oats. If too dry, add a splash of milk (dairy or plant-based). Melt ingredients gently over low heat to avoid burning. Chill cookies if you want them firmer faster. For gluten-free, use certified gluten-free oats. For dairy-free, substitute butter with coconut oil and use dairy-free peanut butter.
