Easy Maple Cinnamon Roll Casserole for Christmas Morning

Description

A make-ahead friendly breakfast casserole made with canned cinnamon rolls, a custard-like egg and cream mixture, and a maple glaze. Perfect for feeding a crowd on Christmas morning with minimal fuss.


Ingredients

  • 2 cans (12.4 ounces each) refrigerated cinnamon rolls with icing
  • 4 large eggs, room temperature
  • 1 cup heavy cream (or half-and-half)
  • ½ cup pure maple syrup, divided
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ cup unsalted butter, melted
  • ¼ cup packed light brown sugar
  • ½ cup chopped pecans or walnuts (optional)
  • Pinch of nutmeg or cardamom (optional)
  • Handful of dried cranberries (optional)

Instructions

  1. Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Open both cans of cinnamon rolls and set the icing packets aside. Cut each roll into quarters (about 32 pieces total).
  3. Spread the cinnamon roll pieces evenly in the prepared dish. Scatter any optional nuts or dried fruit over the top.
  4. In a large mixing bowl, whisk together eggs, heavy cream, ¼ cup maple syrup, vanilla extract, and ground cinnamon until smooth.
  5. Slowly pour the custard mixture evenly over the cinnamon roll pieces. Gently press down with a spatula so the rolls absorb some liquid.
  6. Drizzle the melted butter over the top.
  7. Let the casserole rest at room temperature for 20 minutes, or cover and refrigerate for at least 4 hours (up to 12 hours) for an overnight version.
  8. Preheat oven to 350°F (175°C). If refrigerated, let the casserole sit on the counter while the oven preheats (about 15 minutes).
  9. Cover the dish with foil and bake for 25 minutes.
  10. Remove foil and bake for another 15-20 minutes, until the top is golden brown and the center is set (a knife inserted in the center comes out clean).
  11. While the casserole bakes, warm the remaining ¼ cup maple syrup in a small saucepan or microwave. Stir in the reserved icing packets until smooth to make the glaze.
  12. Let the casserole cool for 5 minutes, then drizzle the maple glaze generously over the top. Serve warm.

Notes

Don’t skip the foil step during the initial bake to prevent the top from burning before the center is set. For best results, let the casserole rest before glazing. The casserole tastes even better the next day.
