Easy Hot Honey Cranberry Baked Brie Bites (Perfect Appetizer)

  • Author: Sarah Wasserman
  • Total Time: 22 minutes
  • Yield: 15 servings (2 bites per serving) 1x

Description

These Easy Hot Honey Cranberry Baked Brie Bites are tiny, fast, and elegant yet unfussy. The hot honey gives them a little kick, the cranberries add a tart pop, and the brie gets melty and perfect inside a crispy phyllo cup.

Ingredients

Scale
  • 2 boxes frozen mini phyllo shells (about 30 shells)
  • 8 ounces brie cheese, cut into 30 small cubes (rind on)
  • ½ cup cranberry sauce (whole berry or jellied)
  • ¼ cup hot honey, plus more for drizzling
  • 1 tablespoon fresh rosemary, finely chopped
  • Flaky sea salt (optional, for finishing)
  • ¼ cup pecans or walnuts, finely chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Arrange the frozen phyllo shells on the baking sheet, spacing them about an inch apart.
  3. Cut the brie into 30 small cubes, each about ½ inch square, keeping the rind on.
  4. Place one brie cube into each phyllo shell, pressing it down gently.
  5. Top each brie cube with about ½ teaspoon of cranberry sauce.
  6. Drizzle about ¼ teaspoon of hot honey over each shell.
  7. Bake for 10-12 minutes, until the phyllo shells are golden brown and the brie is melted and bubbly.
  8. Remove from the oven and let cool for 2-3 minutes.
  9. Garnish with fresh rosemary and a sprinkle of flaky sea salt. If using nuts, sprinkle them on now.
  10. Drizzle with a little extra hot honey right before serving. Serve warm.

Notes

You can assemble these up to an hour ahead and keep them in the fridge; add 2-3 minutes to the bake time. Don’t overfill the shells to avoid sogginess. Keep the rind on the brie to help it hold its shape. Watch the oven closely as phyllo shells can burn quickly. Let them rest for 2-3 minutes after baking to let the flavors settle.
