A quick and easy sheet pan dinner featuring salmon fillets glazed with a sweet and savory honey garlic sauce, roasted alongside fresh vegetables for a flavorful and fuss-free weeknight meal.
Ingredients
- 4 salmon fillets (about 6 oz / 170 g each), skin on or off
- 1/4 cup (85 g) honey, preferably raw
- 4 large garlic cloves, minced
- 3 tablespoons (45 ml) low sodium soy sauce
- 1 tablespoon (15 ml) apple cider vinegar
- 2 tablespoons (30 ml) olive oil
- Freshly ground black pepper, to taste
- Salt, to taste (preferably kosher salt)
- 2 cups (150 g) broccoli florets
- 1 cup (130 g) baby carrots or sliced regular carrots
- 1 medium red bell pepper, sliced
- 1 small red onion, sliced into wedges (optional)
- Optional garnishes: chopped fresh parsley or green onions, sesame seeds
Instructions
- Preheat your oven to 400°F (200°C). Line a large rimmed sheet pan with parchment paper or lightly grease it.
- In a mixing bowl, whisk together honey, minced garlic, soy sauce, apple cider vinegar, olive oil, and freshly ground black pepper to make the honey garlic sauce.
- Toss broccoli florets, baby carrots, sliced red bell pepper, and red onion wedges with a small drizzle of olive oil, salt, and pepper. Spread the vegetables evenly on one side of the sheet pan.
- Place the salmon fillets skin-side down (if skin is on) on the other side of the sheet pan. Pat the salmon dry with a paper towel and season lightly with salt and pepper.
- Brush the honey garlic sauce generously over the salmon fillets and pour any leftover sauce over the vegetables.
- Bake in the preheated oven for 12-15 minutes, until the salmon is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- Optional: Broil for 1-2 minutes at the end for a slightly crispier top, watching carefully to avoid burning the glaze.
- Garnish with chopped parsley or green onions and sesame seeds if desired. Serve immediately while warm.
Notes
Dry the salmon before seasoning to help it sear better. Watch the garlic closely during roasting to avoid bitterness. If vegetables are dense, roast them a few minutes before adding salmon. For gluten-free option, substitute soy sauce with tamari. Broil briefly at the end for a crispier glaze but watch carefully to prevent burning.
