Easy Honey Garlic Chicken Thighs: Best Crockpot Dinner

  • Author: Sarah Wasserman
  • Total Time: 4 hours 5 minutes
  • Yield: 4 servings 1x

Description

These easy honey garlic chicken thighs in the crockpot are the ultimate dump-and-go dinner. With just 5 minutes of prep, you get tender, fall-apart chicken in a sweet-savory glaze that’s perfect for busy weeknights.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken thighs (6–8 thighs)
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4–5 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Sliced green onions (optional garnish)
  • Sesame seeds (optional garnish)
  • Red pepper flakes (optional garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels. Trim excess fat if desired. Place thighs in a single layer at the bottom of the slow cooker.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, tomato paste, rice vinegar, and sesame oil until smooth. Pour evenly over the chicken.
  3. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until chicken is fork-tender.
  4. Carefully transfer cooked chicken to a plate using tongs. Pour the liquid from the crockpot into a small saucepan.
  5. In a small bowl, whisk cornstarch with cold water to make a slurry. Whisk slurry into the saucepan and bring to a simmer over medium heat. Cook, stirring constantly, for 2-3 minutes until sauce thickens to a glossy glaze.
  6. Return chicken to the crockpot or a serving dish. Pour thickened sauce over the top and toss gently to coat.
  7. Garnish with sliced green onions, sesame seeds, and red pepper flakes if desired. Serve immediately over rice, noodles, or vegetables.

Notes

If the sauce tastes too sweet, add a splash more rice vinegar or lemon juice. If too salty, add a little extra honey. For a thinner sauce, skip the cornstarch slurry. The sauce thickens as it sits in the fridge; add a splash of water when reheating.
