Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, beat 1 cup softened unsalted butter with 1 cup packed light brown sugar and 1/2 cup granulated sugar until light and fluffy, about 3-4 minutes with an electric mixer.
  3. Add 2 large eggs one at a time, beating well after each addition. Stir in 1 teaspoon vanilla extract.
  4. In a medium bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon salt, and 1 teaspoon ground cinnamon (if using).
  5. Gradually add the flour mixture to the butter mixture, beating on low speed just until incorporated. Do not overmix.
  6. Fold in 3 cups old-fashioned rolled oats, 1 1/2 cups semi-sweet chocolate chips, and 1 cup colorful candy-coated chocolates.
  7. Using a cookie scoop or tablespoon, drop generous mounds of dough (about 2 tablespoons each) onto the prepared baking sheets, spacing them 2 inches apart.
  8. Press 2-3 candy eyes onto the top of each dough mound.
  9. Bake for 12-14 minutes until cookies are golden around the edges but still soft in the center.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
