Ingredients
- 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 4 tablespoons (56g) unsalted butter
- 4 cloves garlic, minced
- 1/2 cup (50g) Parmesan cheese, shaved into thin ribbons
- 2 tablespoons (30ml) olive oil
- 1 teaspoon (5g) kosher salt
- 1/2 teaspoon (1g) freshly ground black pepper
- 1/2 teaspoon (1g) smoked or sweet paprika
- 1/2 teaspoon (0.5g) dried oregano
- 2 tablespoons fresh parsley, chopped
- Lemon wedges (optional, for serving)
Instructions
- Pat the chicken breasts dry with paper towels. Cut into bite-sized cubes, about 1 inch (2.5 cm) each. Season generously with salt, pepper, paprika, and dried oregano. Toss to coat.
- Preheat your oven’s broiler. Set the oven rack about 6 inches (15 cm) from the heating element. Turn the broiler to high.
- Place a large oven-safe skillet (12-inch/30cm) over medium-high heat. Add the olive oil and 2 tablespoons of the butter. Swirl the pan as the butter melts until it stops foaming and smells nutty.
- Add the chicken pieces in a single layer. Do not overcrowd the pan; work in batches if needed. Cook undisturbed for 3-4 minutes until the bottom is deep golden brown. Flip each piece with tongs and cook another 3-4 minutes until cooked through (internal temperature of 165°F/74°C).
- Reduce the heat to medium-low. Push the chicken to one side of the skillet. Add the remaining 2 tablespoons of butter and the minced garlic. Stir the garlic into the butter for about 30 seconds until fragrant. Toss the chicken with the garlic butter until well coated.
- Using a vegetable peeler, shave thin ribbons of Parmesan directly over the chicken in the skillet. Distribute evenly.
- Transfer the skillet to the preheated oven. Broil for 2-3 minutes, watching carefully, until the Parmesan is melted, bubbly, and starting to turn golden brown at the edges.
- Remove the skillet from the oven (use oven mitts). Sprinkle with fresh chopped parsley and squeeze a lemon wedge over the top if desired. Serve immediately.

For best results, pat chicken dry to ensure browning. Watch garlic closely to prevent burning. Stay by the oven during broiling to avoid burning the Parmesan. Let chicken rest 2 minutes after broiling for juicier bites. For a larger batch, sear chicken in batches and keep warm in a low oven (200°F/93°C) before adding garlic butter and Parmesan.
