Ingredients
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/3 cup creamy peanut butter
- 1/4 cup powdered sugar (optional, for dusting)
Instructions
- Preheat oven to 350°F (175°C). Grease a 24-cup mini muffin tin generously with non-stick spray or butter.
- Melt the butter in a microwave-safe bowl in 20-second intervals. Let cool for a minute.
- In a medium bowl, whisk together melted butter and granulated sugar until smooth and glossy. Add eggs one at a time, whisking well after each. Stir in vanilla extract.
- In a small bowl, whisk together cocoa powder, flour, salt, and baking powder until no lumps remain.
- Add dry ingredients to wet mixture and fold gently with a rubber spatula until just combined. Do not overmix.
- Fill each mini muffin cup about 2/3 full with batter (about 1 tablespoon per cup).
- Place peanut butter in a microwave-safe bowl and heat for 15-20 seconds until thin and drizzle-able. Transfer to a small piping bag or zip-top bag with a tiny corner snipped off.
- Drizzle about 1/2 teaspoon of warmed peanut butter over each brownie bite. Use a toothpick to gently swirl the peanut butter into the batter with a few figure-eight motions.
- Bake for 10-12 minutes, until edges are set and centers still look slightly soft. A toothpick inserted should come out with moist crumbs.
- Cool in the pan for 5 minutes, then run a knife around edges and transfer bites to a cooling rack. Cool completely before dusting with powdered sugar, if using.

Don’t overbake—brownie bites continue to cook from residual heat. Use room temperature eggs to prevent butter from seizing. For a cleaner swirl, warm peanut butter until thin.
