Easy Freezer Breakfast Casserole with Sausage and Hashbrowns

Description

A quick and easy freezer breakfast casserole combining sausage, shredded hashbrowns, eggs, and cheese, perfect for busy mornings and meal prep.


Ingredients

  • 20 ounces frozen shredded hashbrowns
  • 1 pound ground breakfast sausage
  • 8 large eggs, room temperature
  • 1 cup milk (whole or 2%)
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced onion
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder (optional)
  • Butter or non-stick spray for greasing

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch casserole dish with butter or non-stick spray.
  2. In a large skillet over medium heat, brown the ground breakfast sausage, breaking it apart with a spatula. Add diced onion and cook until sausage is fully browned and onions are translucent, about 7-10 minutes. Drain excess fat if needed.
  3. In a large bowl, whisk together 8 large eggs and 1 cup milk. Add salt, pepper, and garlic powder. Whisk until combined and slightly frothy.
  4. Spread frozen shredded hashbrowns evenly across the bottom of the greased casserole dish. Layer the cooked sausage and onion mixture evenly over the hashbrowns. Pour the egg mixture evenly on top. Sprinkle shredded cheddar cheese over everything.
  5. Bake uncovered for 50-60 minutes until edges are golden and center is firm but not dry. A knife inserted should come out mostly clean.
  6. Let the casserole cool completely if freezing. Cover tightly with aluminum foil or plastic wrap and freeze up to 3 months.
  7. To reheat frozen casserole, bake uncovered at 350°F (175°C) for 60-70 minutes until heated through and bubbly. Cover with foil halfway through baking to prevent over-browning if desired.

Notes

Do not skip browning the sausage properly for best flavor. Use frozen hashbrowns to avoid sogginess. Whisk eggs and milk until just combined to keep casserole tender. Let casserole rest 10 minutes after baking to absorb excess moisture. For reheating, oven or toaster oven preferred over microwave to keep edges crispy.
